A restaurant friend of mine asked me, "Why don't you try making chocolate with sake?", which led me to develop chocolate using sake.
Soutenden Bonbon Chocolate uses Junmai Ginjo Sake made by Otokoyama Honten. The design is reminiscent of the sea around the port town of Kesennuma, and is almost like the Earth! Because they are handmade, each one has a different look, and you will be entranced. The pleasant aroma of sake emanates from the chocolate that oozes out from the inside. This chocolate has a slightly more mature taste. It is a product that you will want to pair with alcohol.
Mizutori Ki Raw Chocolate Tart uses sake made by Kakusei. The sake flavor is more subtle than in Souten Den Bonbon Chocolate, making it a sweet treat that goes well with coffee or tea. Briand is known for its "Kesen Numa-chan" cookies topped with plenty of almonds. They also ship these to other regions. They also have a wide variety of handmade baked goods and shortcakes.
One item that particularly catches the eye in the display case is the "Kesennuma Strawberry Tart." The tart is about 12-13cm in diameter, making it the perfect size to eat by yourself or share with someone. The Kesennuma strawberries that wrap the tart are more than sweet enough from their own source. Furthermore, the fresh cream inside brings out the sweetness of the strawberries. This item is made with pie crust, and the combination of juicy strawberries, crispy pie crust, and just the right amount of sweetness of the fresh cream makes it an excellent dish!
This tart was developed after the disaster.
